If the expression in the West is, “the best thing since sliced bread”, in Vietnam it should be, “the best thing since rice paper rolls”. This traditional Vietnamese dish is a perfect palmful of rice vermicelli, fresh Asian herbs, julienned vegetables and meat or seafood wrapped in rice paper. We call our rice paper rolls Soldiers® and add our own spin. Choose from pork and prawn, prawn and garlic, BBQ chicken or our nod to Australia – barramundi and avocado. We also have a low-carb range with tofu, barramundi or poached chicken breast. They’re served at room temperature and come with hoi sin (sticky soy sauce) or nuoc mam (fermented fish sauce). Food tastes better with family. That’s why in Vietnam you’ll see mum, dad, siblings, aunties, uncles and the odd adopted animal sitting together on the floor, eating with hands and laughing with bellies. Rice paper rolls are no exception. Eaten all over the country but originating in the north where it’s more humid, at home it’s a DIY affair. Leafy herbs, vermicelli noodles and heartier fillings are rolled in rice paper sheets and dipped in thick and sweet hoi sin or fermented nuoc mam sauce.
